There are two ways this could be implemented:

With V2 as it is currently implemented, "masking" the feature away with the "cancelAndCreate" functions in V2 Periphery.
With a V2.x EVM open-ended streaming model (related: https://sablier.canny.io/feature-requests/p/allow-for-open-ended-duration-streams)
